Dark Chocolate Bark

This dark chocolate bark is so easy to make and no baking required. There's also a lot less sugar in this compared to common treats like brownies and cakes. Chocolate bark is a great gift too and easy to customize the flavor combinations.

Ingredients

7 oz dark chocolate (72% cacao), chopped

1/2 c roasted, unsalted macadamia nuts

1/4 c toasted, unsalted pumpkin seeds

1 tblsp shredded, unsweetened coconut

1 tsp ground pink himalayan sea salt

Line a standard baking sheet with parchment paper. Add all but about 1 ounce of the chopped chocolate into a microwave safe bowl and microwave in 20-30 second intervals stirring between each interval, until smooth. Remove from microwave and stir in remaining ounce chopped chocolate and let sit for a minute before stirring again until completely smooth.

Pour melted chocolate onto a parchment lined baking sheet, reserving about a tablespoon, and spread evenly in a thin layer with an offset spatula. Next sprinkle salt and macadamia nuts over melted chocolate. Then sprinkle on the pumpkin seeds and shredded coconut. Finish by drizzling the reserved tablespoon of melted chocolate over the top and sprinkle with a little more salt.

Leave at room temperature for 1-2 hours until set or alternatively, place in the fridge to set in 15-20 minutes. Once the bark has set, chop into bite sized pieces and store in the refrigerator.

Salt enhances the flavor of chocolate and is excellent on this bark. You can use any combination of nuts and seeds you like. It's really easy to break up the bark with a pizza cutter if you have one.
