Chocolate covered strawberries are easy to make and so decadent. They're best when you use in season organic strawberries and chocolate with a cacao content 70% or higher. You only need to coat them in a thin layer of chocolate so they have an excellent texture when you bite into them.
Ingredients
2 oz dark chocolate (72% cacao), chopped
12 ripe, organic strawberries
Line a standard baking sheet with parchment paper. Rinse and gently pat dry the strawberries.
Add chopped chocolate into a microwave safe bowl and microwave in 20-30 second intervals stirring between each interval, until smooth. Remove from microwave and gently dip each strawberry into the melted chocolate, letting any excess chocolate drip off. Then place the dipped berry on the parchment lined sheet. Repeat dipping process until all berries are coated. Place baking sheet with chocolate covered berries in the refrigerator for a few minutes to allow the chocolate to set.
