A simple and delicious snack or topping loaded with healthy fats.
Ingredients
2 large avocados
1 clove garlic, peeled
About 25 g fresh cilantro or flat leaf parsley (large handful)
Juice of two limes
Pinch of salt
Pinch of ground cumin
Sliced green onions or more cilantro for garnish
Remove pit and peel from avocados, then add ingredients to the bowl of a food processor or blender and pulse several times until garlic and herbs are well blended with the avocado. If mixing by hand, mince garlic and chop herbs before combining with the avocado. Add salt a little at a time. You can always add more salt but you can't take it away if you've added too much. Also note that acids, like vinegar and lime juice, in this recipe, enhance the salty flavor so less salt is needed.
