You can have these beautiful tacos ready in under 30 minutes. They're excellent with homemade corn tortillas and slices of fresh avocado.
Ingredients
8 oz portobello mushrooms
1 onion
3 cloves garlic
Salt & pepper
Ground coriander
3 tblsp avocado oil
Lime juice
Cilantro
Green onions
Add avocado oil to a large saute pan and bring to a medium heat. While oil is heating, cut onion in half and then chop into thin strips. Add chopped onion to the oil. Then chop the portobello mushrooms into thin strips and add to the onions. Finally, mince the garlic and add to the pan.
The onions and mushrooms will cook quickly. Season with salt and pepper and a generous pinch of ground coriander. Once the onions and mushrooms are tender, the mushrooms will shrink considerably once the moisture is released, add in juice of half a lime and a handful of chopped cilantro and green onions. Stir to incorporate and then serve immediately in fresh corn tortillas. Garnish with more cilantro, avocado slices, lime juice, and green onions.
